List of Ingredients
1/2 cup all-purpose flour
6 tablespoons Equal Sugar Lite for baking
1/2 teaspoon baking powder
1/8 teaspoon salt
6 tablespoons butter
4 ounces unsweetened chocolate, chopped
1/4 fat free milk
1/3 cup unsweetened applesauce
1 teaspoon vanilla extract
1 egg yolk
3 egg whites
1/3 cup shelled walnuts, chopped
2 pints low-fat vanilla ice cream
16 tablespoons fat-free frozen dessert topping, thawed
1 tablespoon cocoa powder
Recipe
Heat oven to 350°. Line an 8-inch square baking pan with nonstick cooking spray.
In a medium-size bowl, whisk together the flour, Equal, baking powder and salt. Set aside.
In a medium-size saucepan, add the butter, chocolate and milk. Heat over medium-low heat, stirring continuously, until chocolate is melted and all ingredients are combined. Stir in the applesauce, vanilla extract and egg yolk. Add the flour mixture and stir till combined.
Beat the egg whites on medium-high speed until stiff peaks form. Stir 1/3 of the beaten egg whites into chocolate mixture. Gently fold in the remaining egg whites. Fold in the walnuts.
Pour mixture into prepared pan. Bake in 350° oven for 18 minutes, or until a wood pick inserted in the center comes out clean. Lift brownie out of pan using 2 ends of the foil. Allow to cool completely on a wire rack.
Cut brownie into 16 squares. For each serving, place 1/4 cup of the frozen yogurt on top of a brownie square. Top with 1 tablespoon of dessert topping and dust with cocoa powder.
