1 cup uncooked oatmeal
2/3 cup McNeil Nutritionals SPLENDA (R) No Calorie Sweetener
1/3 cup unsweetened cocoa
1 tsp baking powder
1/4 tsp table salt
2 large egg(s)
1 tsp imitation vanilla extract, alcohol
2/3 cup unsweetened applesauce
1 tsp coffee, instant, regular, powder
Recipe
Grind oatmeal in blender to make a fine powder, enough to measure 2/3 cup when ground (this may take more than the 1 cup listed in the recipe, but 1 cup is my guess. If more is required adjust points accordingly.) Combine ground oatmeal, splenda, cocoa, baking powder, and salt; set aside. In mixer bowl, beat eggs with vanilla and instant coffee until well combined, then add applesauce and beat just until blended. Stir in dry ingredients until just blended. Spread evenly in 8 x 8 pan sprayed with cooking spray and bake at 350 for about 15 minutes or until tester inserted in centre comes out clean. Cool on rack, store in a covered container in the fridge.
