Apricot Nut Bars

/4 cup - dried apricots
1/4 cup - hot water
2 - eggs
1 cup - Domino® Granulated Sugar
1 teaspoon - grated orange rind
1 cup - sifted all purpose flour
1 teaspoon - baking powder
1/4 teaspoon - nutmeg
1/4 teaspoon - salt
1/2 cup - chopped pecans or walnuts

Recipe
Preheat oven to 350°F. Grease 9-inch square baking pan.
Soak apricots in hot water until soft. Drain well; cut into small pieces. In large mixing bowl, beat eggs well. Add sugar gradually, beating until mixture is light and foamy. Add orange rind. In small bowl, stir flour, baking powder, nutmeg and salt together. Blend into egg mixture gradually. Stir in nuts and apricots.
Spread batter into prepared pan. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Set pan on wire rack; cool completely. Sprinkle with confectioners sugar. To serve, cut into 1 1/2 x 3-inch bars.
Makes 18 bars.
