Apricot Peanut Oatmeal Bars

1/2 cup Jif Creamy Peanut Butter
• 1/2 cup Crisco® Canola Oil
• 1 teaspoon almond extract
• 1 teaspoon vanilla extract
• 1 and 1/2 cups old-fashioned rolled oats
• 1 cup all-purpose flour
• 1 cup firmly packed dark brown sugar
• 1/4 teaspoon salt
• 1/2 teaspoon ground cinnamon
• 1 cup chopped dried apricots
Recipe
Heat the oven to 350ºF.
• Combine the Jif Creamy Peanut Butter, Crisco® Canola Oil, almond extract, and the vanilla extract in a medium bowl and whisk until well blended.
• Combine the oats, flour, sugar, salt, and cinnamon in a large bowl, mix until well blended. Add the apricots and stir until well blended.
• Add the peanut butter mixture and stir until the dough is crumbly and well blended.
• Line a 9 inch square baking pan completely with aluminum foil and spray with Crisco® Cooking Spray. Place the dough in the pan evenly and press it into the pan with your fingers.
• Bake about 30 to 35 minutes until the top is golden brown. Remove from the oven and place on a baking rack. Allow to cool completely.
• Lift the oatmeal bars and foil out of the pan and place on a work surface. Remove the foil and cut into 1 and 1/2 inch by 3 inch bars.
• Makes 18 bars.
