    Baked Gingerbread w/Orange Scented Sauce

    List of Ingredients




    21/2 cups all purpose flour 325 ml
    1 tsp baking powder 5 ml
    1 tsp baking soda 5 ml
    1/2 tsp salt 2.5 ml
    1/2 cup butter 125 ml
    2 tsp ground ginger 10 ml
    1 tbsp minced fresh ginger 15 ml
    1 cup brown sugar 250 ml
    2 cups buttermilk 500 ml
    2 eggs 2
    2 tbsp crystallized ginger, 30 ml
    minced
    1 tsp. vanilla extract 5 ml
    3/4 cup chopped pecans 165 ml

    Recipe



    1. Preheat oven to 350° F (175° C). Grease an 8” (20cm)
    square pan and set aside.
    2. Place the butter in the KALEO Food Processor with the
    sugar, fresh ginger and ground ginger and process until
    butter is soft.
    3. In a separate bowl, mix the flour, baking powder, baking
    soda and salt.
    4. Add the buttermilk, eggs, vanilla and
    crystallized ginger to the food
    processor and mix on low until
    well blended.
    5. Add the flour mixture and
    pecans and pulse until
    thoroughly mixed.
    6. Scrape into baking
    dish and bake for
    20-30 minutes.
    Serves 8.

    Orange Scented Cream Sauce:
    2 cups whipping cream 500 ml
    1/4 cup orange liqueur 60 ml
    1/4 cup orange marmalade 60 ml
    1. In a 3 Qt (Litre) T-FAL Restaurant Gourmet saucepan,
    bring all the ingredients to a boil. Reduce sauce to
    achieve desired thickness. Serve warm over gingerbread.
    Garnish with orange zest and mint leaf.>
