    2 ripe bananas, mashed
    55g (2oz) butter
    140g (5oz) caster sugar
    2 eggs
    225g (8oz) self-raising flour
    pinch of salt

    Recipe



    Preheat the oven to 190°C/375°F/gas mark 5.

    Place the butter and caster sugar into a mixing bowl and cream together. Gradually beat the eggs into the butter mixture.

    Sieve the flour through a metal sieve and gradually fold into the dough, adding the salt and bananas.

    Turn into a greased loaf tin and bake for 25-30 minutes or until golden and springy to the touch.
