    Chandler Walnut Slice

    List of Ingredients




    Shortbread:
    1/2 lb. butter or margarine
    2 c flour
    1/2 c sugar
    1/2 c cornstarch

    Walnut mixture:
    4 eggs
    1 lb. chopped Chandler walnuts
    1 pkg. brown sugar
    1 small bag (7 oz.) shredded coconut
    4 T. flour
    1/2 t. baking powder
    2 t. vanilla

    Frosting:
    1 small pkg. (8 oz.) cream cheese
    1 cube butter or marg.
    1 t. vanilla
    1 pkg. (16 oz.) powdered sugar
    (Bring butter and cream cheese to room temp. for easy mixing)
    1/4 -1/2c grated Chandler walnuts for topping.

    Recipe



    Shortbread:
    Preheat oven to 300 °. Cream butter or margarine with sugar. Add flour and cornstarch.

    Mix well. Knead if possible. Press into bottom of an 11-1/2” x 17-1/2” pan.

    Bake 15 min. @ 300°. While this is baking, prepare walnut mixture.

    Walnut Mixture:
    Beat eggs and brown sugar until light. Add flour, baking powder and vanilla, beat until evenly mixed. Add Chandler walnuts and coconut. Spread over the top of the
    shortbread, (right out of oven-see above) and bake an additional 15 minutes. Increase oven temp. to 350° and bake for 5 more minutes. Baking time may vary; top should be
    lightly browned. Cool.

    Frosting:
    Combine all ingredients using electric mixer and blend to smooth, buttery, consistency.

    Frost and grind* or sprinkle ground or chopped Chandler walnuts over top. Cut into 1-1/2” squares.
