    This is a great dessert after a light meal!

    List of Ingredients




    1. 2.0 cup coconut milk
    10. 0.5 cup toasted coconut
    2. 1.5 pitted cup date
    3. 0.5 or other no-taste oil cup corn oil
    4. 1.0 grated and juiced orange
    5. 1.0 sifted 3 times cup unbleached white flour
    6. 2.0 sifted 3 times cup whole wheat pastry flour
    7. 1.0 tbsp baking powder
    8. 1.0 tsp baking soda
    9. pinch sea salt


    Recipe



    1. Preheat the oven to 350°F.
    2. Oil and line (if desired) a 10x14-inch cake pan or two 10-inch cake pans.
    3. Combine the dates and coconut milk in a saucepan and simmer until the dates are very soft. Blend until smooth in a blender or procesor.
    4. Add the rest of the liquid ingredients with the pinch of sea salt, and blend until smooth.
    5. In a large bowl, thoroughly mix the flours with the baking soda and baking powder.
    6. Pour the liquid ingredients into the dry and mix well. (The batter will be thick.)
    7. Spoon into the prepared pan(s), and bake for 35-45 minutes. When a wooden toothpick or skewer inserted into the center comes out clean, remove from the oven.
    8. Serving Tips: This cake can be served as is when slightly warm, or it can be frosted or glazed, if desired. Garnishes for a plain cake can include toasted coconut, walnuts, almonds or orange slices.
    9. Variations: Add spices to the batter such as allspice, cinnamon, cloves, nutmeg, ginger powder or juice from freshly grated ginger root. Roasted and chopped nuts can also be added.
