    Down-Home Chocolate Mayonnaise Cake

    1/3 cup cocoa
    1 cup boiling water
    1 tsp vanilla extract
    3/4 cup mayonnaise
    2 cups plain flour
    1 cup sugar
    2 tsp baking soda
    1/2 tsp salt

    Prepare 2x 8-inch by 1 1/2 inch cake pans, bottoms lined with baking paper then greased and floured.
    In a medium bowl whisk together cocoa and boiling water until smooth and cool to room temperature. Whisk in vanilla and mayonnaise.
    In a large mixing bowl combine the remaining ingredients and mix on low speed for 30 seconds to blend. Add chocolate mixture. Mix on low speed until dry ingredients are moistened. Increase speed and beat for 1 minute to aerate and develop cake structure. Scrape batter into prepared pans and fill the pans only about one third full.
    Bake in a preheated 180oC oven for 20-25 minutes or until a tester inserted near centre comes out clean and cake springs back when pressed lightly in the centre.
    Allow the cakes to cool in a pan on a rack for 10 minutes. Loosen the sides with a small metal spatula and invert onto greased wire racks.
    Dust finished cake with icing sugar and serve.
