    3 egg whites
    90g butter, melted
    ½ cup (60g) almond meal
    ¾ cup (120g) icing sugar mixture
    ¼ cup (35g) plain flour
    100g dark chocolate, chopped finely
    ¼ cup (60ml) cream
    100g dark chocolate, extra

    Recipe



    Preheat oven to moderate (180°C/160°C fan-forced). Grease 2 x 12-hole mini muffin pans.

    Place egg whites in a medium bowl; whisk lightly with a fork until combined. Add butter, almond meal, sifted icing sugar and flour to bowl; using a wooden spoon, stir until just combined. Stir in chopped chocolate. Spoon tablespoons of mixture into pan holes.

    Bake friands in a moderate oven for about 15 minutes or until browned lightly and cooked through. Turn onto wire racks to cool.

    Combine cream and extra chocolate in a medium heatproof bowl over a pan of simmering water; stir until just melted. (Or, microwave on HIGH (100%) for about 1 minute. Stir mixture until smooth.) Stand until thickened. Spoon chocolate mixture over tops of friands.

    Friands suitable to freeze.
