    List of Ingredients




    1 Cup Brown Sugar
    ½ Cup Self Raising Flour
    75g Western Star Butter
    2 Cups Plain Flour
    2 Tsp Baking Powder
    ¼ Tsp Salt
    125 Western Star Butter, soft
    1 Cup Castor Sugar
    3 Eggs, lightly beaten
    1 Cup Sour Cream
    2 Cups Mixed Berries (blueberries, raspberries, blackberries are best)



    Recipe



    Preheat the oven to 180C. Place the brown sugar and flour in a bowl, and rub the butter in with the fingertips until the mixture resembles breadcrumbs. This is the topping mixture.

    Sift the other flour, baking powder and salt into a large bowl. Place the other butter and sugar in another bowl and mix together until creamy.

    Add the eggs and mix together and then fold in the sifted dry ingredients. Add the sour cream and mix well.

    Pour the mixture into a prepared spring-form cake tin and sprinkle the top with the berries and topping mixture. Serve warm, dusted with icing sugar and some cream.

    Bake for 50 minutes or until a skewer comes out clean. Leave to cool for 10 minutes before removing from the tin.
