    1/2 cup shortening

    3/4 cup molasses

    1/4 cup granulated sugar

    1 egg

    2-1/2 cups all-purpose flour

    1 tsp each: baking soda, baking powder

    1 tsp each: ground cinnamon, ground ginger

    1/4 tsp salt

    1/2 cup buttermilk

    1/2 cup black tea, at room temperature

    Grease and flour 9-inch square baking dish.

    In large bowl, cream together shortening, molasses and sugar, using electric beater. Beat in egg.

    In medium bowl, stir together flour, baking soda, baking powder, cinnamon, ginger and salt.

    In small bowl, stir together buttermilk and tea.

    Beat third of flour mixture into molasses mixture until blended. Beat in half of buttermilk mixture. Beat in third of flour mixture. Beat in remaining buttermilk mixture. Beat in remaining flour mixture.

    Pour into prepared baking dish. Bake in preheated 350F oven 50 to 60 minutes, until tester comes out clean.


    Molasses Buttercream

    From Crosby's Molasses Family Favourites cookbook.

    1/3 cup butter, at room temperature

    1 egg white

    3 cups icing sugar, sifted

    1 tsp vanilla extract

    1 tbsp molasses

    2 tbsp milk

    In medium bowl, beat butter with egg white, 1 cup icing sugar and vanilla. Beat in 1 cup icing sugar and molasses. Beat in remaining icing sugar and milk until well blended.

    Makes enough to ice 1 cake.
