    Pear and Chocolate Buttermilk Cake

    175g unsalted butter
    175g light brown soft sugar
    2 medium eggs
    300g self-raising flour
    100g pack milk chocolate chips
    125g buttermilk
    2 Conference pears, peeled and thinly sliced
    1 x 5ml spoon ground cinnamon
    1 x 15ml spoon golden syrup

    Recipe



    Preheat oven to 180°C, 350°F, gas mark 4.

    Grease a deep 20cm round cake tin and line the base with baking paper.

    Beat together 150g each of the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until just combined. Fold in the flour, chocolate chips and buttermilk until well combined.

    Spread the mixture into the prepared tin, top with the pear slices, spread with the remaining butter, and sprinkle over the cinnamon and remaining sugar. Bake in a preheated oven for 45 minutes.

    Remove from oven and allow the cake to sit in the tin for 10 minutes. Turn out onto a wire rack, and invert onto another wire rack so that the pears are on top.

    Gently heat the golden syrup in a small pan, then brush it over the pears.
