    Warm Chocolate Polenta Cakes w/ Sauce

    125g softened butter
    2/3 cup (150g) caster sugar
    1¼ cups (150g) almond meal (ground almonds)
    ¼ cup (25g) cocoa powder
    50g dark chocolate, grated
    2 eggs
    ½ cup (85g) instant polenta
    1/3 cup (80ml) milk
    CHOCOLATE SAUCE
    125g dark chocolate, chopped
    ½ cup (125ml) cream

    Recipe



    Preheat the oven to moderately slow (160°C/140°C fan-forced). Grease 8 friand tins, line the bases with baking paper.

    Beat butter and sugar in a small bowl with an electric mixer until light and fluffy. Add almond meal, sifted cocoa and chocolate, mix until just combined.

    Add eggs one at a time, beating well between additions. Stir in combined polenta and milk.

    Divide mixture among prepared tins. Bake in a moderately slow oven for about 30 minutes or until cooked when tested. Turn onto a wire rack to cool slightly.

    CHOCOLATE SAUCE: Meanwhile, combine chocolate and cream in a heatproof bowl; stir over a pan of simmering water until chocolate is melted.

    Serve cakes warm with warm Chocolate Sauce.

    Cakes suitable to freeze.
    Sauce suitable to microwave.
