    CINNAMON MATZAH BALLS

    1 cup margarine (239 ml)
    1/2 cup dry sweetener (120 ml)
    1/2 teaspoon vanilla extract (120 ml)
    1-3/4 cups fine matzah meal or matzah cake flour (420 ml)
    1 teaspoon ground cinnamon (5 ml)
    1/2 teaspoon ground ginger (2 ml)

    Recipe



    Preheat oven to 350 degrees F. Allow margarine to soften
    at room temperature.
    Place margarine in a medium bowl. Cream together
    margarine and sweetener. Mix in vanilla. Sift
    together matzah meal, cinnamon, and ginger. Mix
    into margarine. Cover and place in the refrigerator
    for at least 1 hour.
    Shape into 1-inch round balls and place on an
    ungreased baking sheet. Bake for 12 minutes or
    until lightly golden. Allow matzah balls to
    cool before serving. Can be dusted with cinnamon
    or rolled in finely chopped almonds prior to serving.

    Note: ½ teaspoon fresh orange zest can be
    substituted for the vanilla.
