    1/2 cup butter, at room temperature

    1/2 cup each: brown sugar, molasses

    1 egg

    1/3 cup strong coffee, at room temperature

    2 cups all-purpose flour

    2 tsp ground ginger

    1 tsp ground cinnamon

    1/2 tsp ground cloves

    1/8 tsp salt

    3 tbsp hot water

    1 tsp baking soda

    In large bowl, cream together butter, sugar and molasses using electric mixer. Blend in egg, then coffee.

    In medium bowl, stir together flour, ginger, cinnamon, cloves and salt. Beat into molasses mixture.

    In small bowl, stir together hot water and baking soda. Beat into molasses mixture.

    Drop heaping tablespoons of batter 2 inches apart on to greased baking sheets. Bake in preheated 350F oven on 2 racks close to centre, about 15 minutes, until puffed and starting to brown around edges. Switch racks halfway through baking time.

    Makes 32.
