Passionfruit Butter Biscuits

250g butter, softened
1 1/3 cups (220g) icing sugar mixture
2 cups (300g) plain flour
½ cup (75g) cornflour
1/3 cup (50g) rice flour
2 tablespoons passionfruit pulp
Recipe
Combine butter, sugar and flours in large bowl of food processor; process 2 minutes or until mixture is combined. Add passionfruit; process until mixture clings together.
Transfer mixture to lightly floured surface; knead gently until smooth. Cut mixture in half, roll each half into 26cm log, wrap in plastic wrap; refrigerate 1 hour.
Preheat oven to moderately slow.
Cut logs into 1cm slices. Place slices about 3cm apart on lightly greased oven trays. Bake about 20 minutes or until pale golden colour. Cool on wire rack.
TIP Recipe can be made a week ahead; store in an airtight container
