Spicy Molasses Cookies

2 1/4 cups unsifted all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon salt
1/2 cup (1 stick) butter, at room temperature
3/4 cup packed dark-brown sugar
3/4 cup dark molasses
1 egg
1/3 cup milk

Recipe
. Heat oven to 375°. Coat baking sheet with cooking spray.
2. Combine flour, baking soda, baking powder, cinnamon, nutmeg, allspice and salt in small bowl.
3. Beat butter, brown sugar in bowl until smooth and creamy. Beat in molasses and egg. Alternately beat in flour mixture and milk, beginning and ending with flour mixture.
4. Drop dough by rounded tablespoons 2 inches apart onto prepared baking sheet.
5. Bake in 375° oven 8 to 10 minutes, until soft-firm to touch. Transfer sheet to rack for 1 to 2 minutes. Remove cookies to racks. Sprinkle with sugar. Cool completely.
6. If not serving right after baking, freeze in layers, separated by waxed paper, in sealed plastic container. To serve, bring to room temperature.
For Crispy Cookies: Eliminate egg. Drop by level tablespoons instead of rounded. Bake in 375° oven 10 to 11 minutes. Cool on sheet 2 minutes; remove to rack. Makes 5 dozen.
