    List of Ingredients




    1 cup butter
    1/2 cup sugar
    1 egg yolk
    1 teaspoon almond extract
    2-1/2 cups all-purpose flour

    Recipe



    1. In a large bowl, beat butter and sugar with an electric mixer on medium speed until fluffy.
    2. Add egg yolk and almond extract; beat well. Beat or stir in flour.
    3. Force the unchilled dough through a cookie press onto ungreased cookie sheets.
    4. Bake in a 375 degree F oven for 8 to 10 minutes or until edges are firm, but not brown.
    5. Cool the baked cookies on wire racks. Makes about 60 cookies.
    Variations: For a nutty cookie, stir in 1/2 cup finely ground nuts with the flour (toast nuts before grinding, if you like). For a chocolate cookie, reduce the flour to 2-1/4 cups. Add an additional 1/4 cup sugar and 1/4 cup unsweetened cocoa powder. (Add cocoa powder before you add the flour.)
    Note: If you like, dip tops of cookies in icing; then, sprinkle with chopped nuts or colored sugar. Or, sprinkle on the decorative toppings before baking.
