Vanilla & Chocolate Refrigerator Cookies

1 cup butter, softened
1 cup granulated sugar
2 eggs
1 1/2 teaspoons Madagascar Pure Vanilla Extract
2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 square (1 oz.) unsweetened chocolate, melted
Recipe
In large bowl, cream butter with sugar. Add eggs, one at a time, beating after each addition. Add vanilla and mix well. Stir in dry ingredients. Divide dough in half. Stir in melted chocolate into one half. Shape dough into rolls, 2 1/4-inches in diameter. Wrap in plastic wrap and chill until firm, 3-4 hours overnight. Preheat oven to 400°F. Using half vanilla and half chocolate, slice the dough into 1/4 inch slices. Place on ungreased cookie sheet. Using bear and elephant cutters dipped in flour, cut half of each flavor of the sliced dough into bears and half into elephants. Place vanilla bears into chocolate bear cut outs and chocolate into vanilla. Repeat with elephants. Bake 8-10 minutes or until golden brown.
Makes approximately 2 dozen.
