180g reduced-fat margarine or butter
½ cup icing sugar
1 tsp lemon zest
½ cup cornflour
1¼ cups self-raising flour
3 passionfruit

50g reduced-fat margarine or butter
1 cup icing sugar
2 passionfruit
Recipe
Preheat oven to 200°C. Line two flat oven trays with baking paper.
Cream the margarine or butter, sugar and zest until light and fluffy. Stir in the sifted cornflour, four and passionfruit pulp. Cover and refrigerate for 20 minutes.
Roll the dough out to about 5mm thickness. Cut into 25 biscuits and place on the prepared trays. Bake in the oven for 5-8 minutes or until lightly browned.
Cool on wire racks until cold. Ice each biscuit with icing mixture and place on a flat surface.
Icing
In a medium bowl, melt the margarine or butter in the microwave on high for 30 seconds.
Stir in the icing sugar and passionfruit. Beat quickly for 1-2 minutes, or until the icing is really shiny.
