    Chocolate Three-Layer Cheesecake

    1 cup - chocolate cookie or graham-cracker crumbs
    3 tablespoons - butter or margarine, melted
    1 envelope - unflavored gelatin
    1/4 cup - cold water
    2 (8-oz.) pkgs. - cream cheese, softened
    1 1/4 cups - Domino® Confectioners Sugar, divided
    1/4 cup - unsweetened cocoa powder
    1 teaspoon - vanilla
    1 (8-oz.) container - frozen whipped topping, thawed
    1/4 cup - cold strong coffee
    Chocolate-covered coffee beans or semi-sweet chocolate chips (optional)

    To Prepare Crust:
    In medium bowl, mix crumbs and butter until well blended. Press mixture evenly onto bottom of 8- or 9-inch springform pan. Place pan in freezer while preparing filling.

    To Prepare Filling:
    In small saucepan, mix gelatin with cold water; let stand 1 minute to soften. Cook over medium heat until gelatin completely dissolves, stirring frequently. Remove from heat.

    In large bowl, with mixer at low speed, beat 1 package cream cheese, 3/4 cup confectioners sugar, cocoa, vanilla and 2 tablespoons gelatin mixture until well blended. Add 1 1/4 cups whipped topping; continue mixing until blended. Spoon mixture over crust in pan; return to freezer while preparing second layer.

    In same bowl, beat remaining cream cheese until fluffy; gradually add remaining confectioners sugar, cold coffee and remaining gelatin mixture until well blended. Add 1 1/4 cups whipped topping; continue mixing until blended. Remove pan from freezer; spoon mixture carefully over chocolate layer, spreading evenly. Cover and refrigerate at least 3 hours or until firm.

    To serve, spread remaining whipped topping over cake. Carefully remove cheesecake from pan. Sprinkle with chocolate-covered coffee beans or chocolate chips, if desired.

    Makes 10 servings.
