Apple Strudel

List of Ingredients
2 tablespoons dark rum
1/2 cup raisins
2 to 3 Granny Smith apples, peeled, cored, halved, and sliced 1/8-inch thick
1/2 lemon, juiced
1 teaspoon cinnamon
1/2 cup sugar, plus 1/4 cup, for sprinkling
5 sheets phyllo dough
2 egg whites
2 teaspoons extra-virgin olive oil
1/4 cup panko bread crumbs
1/4 cup chopped almonds
Cinnamon, for garnish
Powdered sugar, for garnish
Caramel sauce, for garnish (store-bought)
Recipe
Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Pour rum over raisins and cook in microwave for 25 seconds; allow to rest 10 minutes.
Mix apples, sugar, lemon juice, raisins, and cinnamon in bowl.
Combine egg whites and olive oil to create a wash. Combine sugar, panko, and almonds to create crumb mixture.
Brush phyllo dough with wash, sprinkle with crumb mix. Repeat four times, the last time spooning the apples onto the bottom third of the dough leaving a 2-inch border from the three edges.
Roll the phyllo over once, then fold in the sides. Continue to roll gently. Place strudel seam side down on baking sheet, brush with wash, and sprinkle with sugar.
Bake for 20 minutes and allow to cool before slicing with a serrated knife.
