    Baked Bananas w/ Rum

    6 lg., barely ripe, firm bananas, unpeeled
    1 tsp. butter
    1/2 c. apple juice
    1/2 c. white rum
    2 1/2 tbsp. granulated sugar
    1/2 tsp. nutmeg

    Recipe



    Preheat oven to 400F

    Place unpeeled bananas on baking sheet. Prick skin of each banana several times with fork. Bake until skin turns black, about 10 minutes.

    In large deep skillet combine remaining ingredients and cook over medium-high heat for 8 minutes. Do not allow to burn.

    Carefully peel one side of banana, peeled side down, in rum syrup. Remove remaining peel. Cut each banana in 1/2 crosswise and cook, carfeully turning once, until lightly golden, about 2 minutes. Divide bananas and any remaining sauce among 6 warmed plates. Serve at once.
