Blueberry, Lemon and Ginger Creams

250g tub mascarpone
150g carton natural yogurt
2 x 15ml spoons lemon curd
2-3 pieces stem ginger in syrup, finely chopped plus a little extra for decoration
2 x 125g punnets blueberriesRecipe
Mix together the mascarpone, yogurt, lemon curd, ginger and blueberries.
Spoon into 4-6 individual serving dishes and decorate with a little stem ginger.
