125g Western Star Butter
150g White Chocolate
175g Castor Sugar
125g Self-Raising Flour
90g Desiccated Coconut
2 Eggs, lightly beaten
200g Raspberries, fresh or frozen (thawed)
Icing sugar, for dusting
Recipe
Preheat the oven to 180C.
In a large saucepan, melt the butter and chocolate over low heat. Add the sugar and stir to combine once melted.
Pour the mixture into a large bowl, then add the flour and coconut, stir to combine, then lightly mix in the beaten eggs. Gently fold in the raspberries, and pour the mixture into a prepared slice tin. Bake in the oven for 40 minutes or until firm.
Cool the slice in the tin, dust with icing sugar, and slice.
