Godiva Chocolate Icebox Pudding

Pudding:
1/2 cup granulated sugar
1/4 cup water
2 bars (1.5 ounces each) Godiva Dark Chocolate, finely chopped
4 large egg yolks
1 cup (2 sticks) unsalted butter, softened
1 cup confectioners’ sugar
1 cup heavy cream
Garnish:
Chocolate curls
Recipe
Make the pudding:
1. Over low heat in a medium saucepan, whisk together granulated sugar and water until sugar is dissolved. Add chocolate and continue to whisk until chocolate is melted and mixture is smooth. Add egg yolks one at a time, whisking until mixture is smooth and temperature reaches 160ºF. Remove from heat and cool.
2. In bowl of electric mixer, beat together butter and confectioners’ sugar at medium high speed until light and fluffy, about 3 to 5 minutes. Scrape down sides of bowl. Add chocolate mixture and beat for another 2 minutes. Scrape down sides again. Beat again to be sure everything is fully blended.
3. In another bowl of electric mixer, whip heavy cream until soft peaks form. Fold whipped cream into chocolate mixture. Pour mixture into 1 1/2 quart bowl and place in refrigerator until well chilled, at least 3 hours. Spoon pudding into bowls and serve with chocolate curls.
