Honeyed Marscapone and Fruit Trifle

1 madeira cake, cut into thick slices
4 x 15ml spoons sweet white wine
1 x 410g tin pear halves in syrup, drained and halved again
180g packet reapberries
250g marscapone cheese
300ml double cream
grated zest of 1 orange
2-3 x 15ml spoons squeezed orange juice
2 x 15ml spoons runny honey
1 x 100g packet extra fine dark chocolate
Recipe
Roughly break the cake into pieces and put into the base of a large glass bowl. Spoon over the sweet white wine and top with the pears and raspberries.
In a large bowl, mix together the marscapone cheese, double cream, orange zest, honey and orange juice. Pour over the fruit and chill until firm.
Using a sharp knife or peeler, cut the chocolate into thin shreds. Scatter the trifle with the chocolate shreds and serve.
