Lemon Crunch Parfaits

List of Ingredients
1/4 cup (50 mL) butter, melted
2 tbsp (30 mL) light brown sugar
� cup (125 mL) unsifted flour
1/4 cup (50 mL) chopped nuts
1 can (300 mL) Regular or Low Fat Eagle Brand�
3 tbsp (45 mL) powdered lemonade drink mix
1 container (8 oz) lemon yogurt
Few drops yellow food colouring, optional
Recipe
1. Combine butter, sugar, flour and nuts. Spread evenly in 8-inch (2 L) square baking pan.. Bake in preheated 350�F (180�C) oven 10 minutes, stirring after 5 minutes. Let cool.
2. Combine Eagle Brand and drink mix; stir in yogurt and food colouring, if desired.
3. In parfait or dessert glasses, alternately layer crumbs and yogurt mixture. Chill thoroughly. Refrigerate leftovers.
