Mrs. Smith's Lemon Blueberry Parfait

List of Ingredients
1 Mrs. Smith's Blueberry Pie, baked and cooled per directions on package
1 tub (8 oz.) French Vanilla Whipped Topping, thawed
1 pkg. (4 serving size each) Lemon Flavored Instant Pudding
1/4 cup Toasted Pecans, chopped
1 cup fresh strawberries OR 1 sliced lemon for garnish
Recipe
Prepare lemon pudding per directions. Mix 2/3 of whipped topping with lemon pudding and set aside remaining whipped topping. Break up the blueberry pie and layer a couple of spoonfuls in the bottom of each parfait dish. Add a layer of toasted pecans, then a layer of the lemon pudding/whipped toppping mixture. Repeat. Store in refrigerator until ready to serve. Just before serving add a dollop of the remaining whipped topping.
Tip: To toast nuts, spread them in a single layer on a baking sheet and bake at 350°F for 5 to 7 minutes or until lightly toasted.
Makes 10 - 12 servings.
