Panettone Bread and Butter Pudding

3/4 Maina Il Buon Dolce panettone
75g butter, softened
3 large eggs
50g sugar
300ml milk
284ml carton double cream
5ml spoonful ground cinnamon
Recipe
Preheat the oven to 150°C, 300°F, Gas Mark 2.
Cut 3/4 of the panettone into approximately 8 slices and lightly butter each, then cut into triangles and place in a lightly oiled 32 x 20cm shallow overproof dish in overlapping rows.
Beat the eggs with the sugar.
Mix the milk and cream together and slightly warm in a saucepan over a low heat. Then pour over the beaten eggs.
Pour the mixture over the panettone triangles and leave to stand for at least 15 minutes.
Top with ground cinnamon and cook in the centre of the oven for 75 minutes. After 15 minutes cover with a sheet of greaseproof paper to prevent the top overcooking.
This dessert is delicious served hot or warm, on its own or with fresh fruit.
