    1 1/3 cups all-purpose flour
    2 Tbs. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    6 Tbs. chilled butter, but into pieces
    6 Tbs. cream or whole milk
    4-5 cups sliced strawberries
    brown sugar
    1 cup whipping cream
    1/2 tsp. vanilla
    sugar to taste
    4 whole strawberries with stems, garnish

    Sift together flour, sugar, baking powder and salt into a mixing bowl. Cut in butter until the size of peas. Using a fork quickly mix in the cream. Do not over work dough. Roll out dough on a lightly floured board to 3/4-inch thickness.

    Cut dough into 3 inch circles. Gently reform dough, roll again and cut more circles to make 4 total. Place on a lightly greased baking sheet. Bake 10-12 minutes, until slightly risen and browned. Sweeten sliced strawberries with brown sugar.

    Whip cream with vanilla, sweetening to taste, until soft peaks form. Split warm biscuits. Place sweetened strawberries on bottom half, dollop with 2/3 of whipped cream. Place on top. Decorate with remaining cream and a whole strawberry.

    Yield: 4 servings
