TOPPING
1/2 cup each flour, packed light-brown sugar and sweetened flaked coconut
1/3 cup (1 3/4 oz) macadamia nuts,
coarsely chopped
1/2 tsp ground ginger
1/2 stick (4 Tbsp) cold butter or
margarine, cut in small cubes
FILLING
2 Tbsp cornstarch
1 Tbsp each sugar, light corn syrup and fresh lime juice
4 cups 3/4-in. cubes fresh pineapple (from a 3- to 3 1/2-lb pineapple)
2/3 cup (3 1/2 oz) coarsely chopped sundried papaya
Recipe
1. Heat oven to 375�F. Have a shallow 1 1/2-qt baking dish ready.
2. Topping: Place ingredients in a medium bowl and rub together with fingertips or stir with a fork until coarse crumbs form.
3. Filling: Mix cornstarch and sugar in a large bowl. Stir in corn syrup and lime juice until blended. Add pineapple and papaya; toss to mix and coat. Spread in ungreased baking dish; sprinkle with Topping.
4. Bake 35 to 40 minutes until bubbly, fruit is tender when pierced, and topping is crisp and lightly browned.
