250g dark chocolate
200g sugar
6 whole eggs
200g butter diced & softened at room temperature
1 tin sweetened black cherries
1 cinnamon stick
2 star anise
� orange zested and juiced
2 teaspoons arrowroot
King Island cream to serve
Soft butter and cocoa for the tin

Recipe
Preheat oven to 200�C. Gently mix sugar & egg together until sugar has dissolved.
Melt chocolate add to very soft butter & stir until mixture is smooth.
Fold the two mixes together until you have a rich velvety consistency.
Take 8 ramekins & grease with butter then dust with cocoa powder.
Pour the chocolate mix into small ramekins � full and bake for 10 mins at 200�C until crusted on top.
In a small saucepan heat the cherries, cinnamon stick, star anise and zest and juice. Stir though arrowroot mixed with a little water until thickened.
Tip out individually on plates and serve with sweetened cream & black cherries
