    150 ml Safeway Pure UnSweetened Orange & Mango Juice, Longlife
    3 level tbsp cornflour
    2 large egg(s), separated
    425 ml skimmed milk
    1 tsp vanilla essence
    50 g caster sugar
    2 medium mango (whole fruit), ripe, peeled and chopped

    Preheat the oven to 190°C, 375°F, Gas Mark 5. Put the mango and orange juice into a medium-sized non-stick saucepan. Blend the cornflour into this juice, then stir in the egg yolks, milk and vanilla extract. Heat, stirring constantly with a small whisk or wooden spoon until the mixture boils and thickens.


    Remove the pan from the heat and stir in half the sugar. Tip in the chopped mangoes, then stir.


    Spoon the mixture into 4 individual baking dishes or large heatproof teacups. Place them on a baking tray and bake for 5 minutes whilst making the meringue topping.


    Whisk the egg whites in a grease-free bowl with perfectly clean beaters until they hold their shape. Tip in the remaining sugar and whisk again for a few more moments until the meringue is glossy. Pile onto the hot desserts and bake for 5 more minutes until the meringue is billowy and golden.

    Cook’s tip: Remember that the slightest trace of grease will prevent egg whites from whipping.
