List of Ingredients
2 big aubergines peeled and cut into 4 pieces
3 onions sliced
2 tins (400g) of crushed tomatoes or 1 kg fresh tomatoes diced
3 cloves garlic crushed
1 tbs. lemon juice
1 400g tin of chick peas rinsed and drained
a pinch of chilli powder (optional)
Salt and pepper
2 tbs. oil
Oil for deep-frying
Recipe
Deep-fry the aubergines or brush with oil and grill on both sides. Place on kitchen paper to absorb the extra oil. Heat 2 tbs. oil in a deep pan, fry the onions till soft. Add the garlic, stir for a few minutes then add crushed tomatoes, lemon juice, chilli, chick peas, salt and pepper, cover and simmer for 30 minutes, then add the aubergine. Simmer for 5 minutes more or till the aubergines are heated through. Serve cold.
