    Orange Ginger Baby Bok Choy

    List of Ingredients




    1 tbsp vegetable oil

    3/4 lb (350 g) baby bok choy, split lengthwise

    4 cloves garlic, minced

    1 tbsp chopped ginger

    1 cup chicken stock

    1/2 cup orange juice

    4 star anise

    2 tbsp each: cornstarch, cold water

    Zest of 1 orange

    2 tbsp minced cilantro

    Salt to taste

    Asian chili paste to taste

    Heat oil in large, shallow pan over medium-high. Add bok choy and cook, turning, until surfaces are browned, 3 to 5 minutes. Add garlic and ginger. Stir 30 seconds. Add stock, juice and anise. Reduce heat to medium. Cover and cook until tender but still firm, 2 to 3 minutes, depending on size of bok choy. Remove from heat. Discard anise.

    Blend cornstarch and water. Return pan to heat. Stir in half the cornstarch mixture and boil 1 minute, or until thickened. Add some or all of remaining cornstarch mixture to thicken to taste. Stir in orange zest, cilantro, salt and chili paste.

    Makes 6 servings.
