Prawns and Vegetables with Noodles

450g Hokkien noodles
16 large uncooked prawns
1 tsp peanut oil
3 cloves garlic, crushed
1 tsp finely chopped fresh ginger
1 large red capsicum, sliced
200g oyster mushrooms, halved
3 cups shredded Chinese broccoli, shredded
1 cup bean sprouts
1 tsp coarsely ground black pepper
1 Tbs rice vinegar
2 Tbs oyster sauce
1 Tbs light soy sauce
2 Tbs chopped fresh garlic chivesRecipe
Rinse noodles in hot water; drain and set aside. Shell and devein prawns, leaving tails intact.
Heat oil in a large non-stick pan; cook garlic, ginger, capsicum, mushrooms and prawns, stirring, until prawns just change colour. Add noodles, vegetables and combine remaining ingredients; cook, stirring, until cabbage has wilted
