Sesame Noodles

List of Ingredients
8 oz (250 g) spaghetti
1 cup (250 mL) chopped cucumber
Half sweet red pepper, chopped
1 cup (250 mL) bean sprouts
1/4 cup (50 mL) peanuts (unsalted), chopped
2 tbsp (25 mL) rice vinegar
2 tbsp (25 mL) vegetable or chicken stock
1 tbsp (15 mL) toasted sesame seeds
1 tbsp (15 mL) sesame oil
1 tbsp (15 mL) soy sauce
1-1/2 tsp (7 mL) minced gingerroot
1/2 tsp (2 mL) granulated sugar
1/4 tsp (1 mL) Asian chili paste
2 cloves garlic, minced
1/4 cup (50 mL) chopped fresh coriander (optional)
Recipe
In pot of boiling salted water, cook pasta for 8 minutes or until tender but firm. Drain and chill under cold running water; drain and place in bowl. Add cucumber, red pepper, bean sprouts and peanuts.
Whisk together vinegar, stock, sesame seeds, sesame oil, soy sauce, ginger, sugar, chili paste and garlic; toss with pasta mixture. Sprinkle with coriander (if using).
