    1/4 + 1 teaspoon soy sauce
    1/4 cup seasoned rice vinegar
    4 scallions, chopped
    3 teaspoons sesame oil
    2 teaspoons grated ginger
    1/4 teaspoon crushed red pepper
    1/2 pound ground turkey breast
    1/4 cup water chestnuts chopped
    1 garlic glove
    1 egg white
    1/2 teaspoon salt
    30 (3inch round) wonton wrappers

    To prepare the dipping sauce, combing the 1/4 cup soy sauce, the vinegar, 1 of the scallions, 2 teaspoons of the sesame oil, 1 teaspoon of the ginger, and the crushed red peper in a bowl

    To prepeare the filling, puree the ground turkey, water chestnuts, the remaining 3 scallions, remaining 1 teaspoons ginger, the garlic, egg white, remaining 1 teaspoon sesame oil, and the salt. Use hand mixer or food processor to blend.

    Place the wonton wrappers on a dry work surface. Drop 1 teaspoon of the filing into the center of each wonton wrapper. Brush the edges with water, and then fold into half-circles. Press the filling to release any trapped air; press the edges to seal.

    Arrange the dumplings, in batches, in a steamer basket; set in a saucepan over 1 inch of boiling water. Cover tightly and steam dumplings until cooked through, about 7 minutes. (Note: Spray nonstick in pot to avoid help dumplings from sticking together)
    Option: Pan fry to brown
