    Balsamic Swordfish Skewers

    4 x 180g (approx) Swordfish Steaks, cut into even cubes (double this if cooking for more)
    1 Cup Balsamic Vinegar
    2 Tbsp Olive Oil
    3 Tbsp Western Star Butter



    Recipe



    Place the swordfish cubes onto metal or wooden skewers until you have 4 even, large skewers. Place the skewers in a bowl or large container and add the balsamic vinegar, oil and lemon rind, and rub all over the fish. Set aside to marinate for anytime up to 24 hours.

    Heat a large frying pan over high heat, and once hot, carefully place in the skewers, and pour over the remainder of the liquid. Turn the skewers once every 1 minute until they have nice color and are cooked through.

    Remove from the pan and plate them up. Add the butter to the pan whilst still hot, and melt with the leftover juices.

    Pour this mixture over the skewers and serve immediately with either steamed or roast vegetables or a fresh green salad. Also perfect with the above couscous salad.
