Recipe Introduction
These peppery shrimp make a dramatic—and popular—item on a buffet table. If desired, soak wooden skewers in water for 30 minutes, then thread shrimp onto skewers before cooking.
List of Ingredients
1 1/4 pound shrimp, jumbo, peeled
1/4 teaspoon ground cinnamon,
1/4 teaspoon freshly cracked black pepper,
1/4 teaspoon salt,
1/4 teaspoon cayenne pepper,
1/2 teaspoon dark brown sugar,
1/4 teaspoon dry mustard
Recipe
1 If desired, insert a wooden skewer through each shrimp.
2 Combine cinnamon, black pepper, salt, cayenne, brown sugar and mustard; mix well. Coat the shrimp with the spice mixture.
3 Place the shrimp and any remaining spice mixture in a zip-top bag. Refrigerate at least 15 minutes and up to 24 hours.
4 Preheat broiler or grill. If broiling, line a baking sheet with aluminum foil and arrange the shrimp on the baking sheet.
5 Broil shrimp in the middle of the oven until cooked, about 10 minutes. If grilling, cook shrimp over hot coals until opaque, about 2-3 minutes on each side. Keep skewers out and away from coals to prevent them from burning.
