    1 tablespoon olive oil
    1 onion, sliced
    1 green pepper, chopped
    2 x 440g can peeled tomatoes, chopped
    1/2 cup white wine
    2 tablespoons tomato paste
    1 teaspoon oregano
    2 large eggplants, sliced
    Olive oil for brushing
    1 x 250g packet of lasagna sheets, cooked
    1 small pepperoni salami, thinly sliced
    1/2 cup sliced black olives
    500g Perfect Italiano grated mozzarella

    Recipe



    Heat the oil and sauté the onion and pepper until softened.
    Add the tomatoes, wine, paste and oregano and simmer uncovered for 15 minutes until reduced and thickened.
    Brush the eggplant slices with oil and grill on both sides until golden brown.
    Arrange 2 layers of lasagne sheets, eggplant, tomato sauce, salami, olives and mozzarella in a baking dish, and finish with a layer of lasagne, sauce and mozzarella.
    Bake at 200C degrees for 45 minutes until golden brown and cooked through.

    For easy serving allow to stand for 15 minutes before cutting into square.
