    Linguine with Peanut Sauce

    List of Ingredients




    1 lb linguine
    1 bag (16 oz) cut broccoli
    (such as Broccoli Wokly)
    1 large red bell pepper,
    cut in strips


    Sauce:
    1 cup reduced-fat peanut butter
    1/4 cup each light (reduced-sodium) soy sauce
    and seasoned rice-wine vinegar
    2 tsp each ground ginger and
    garlic powder

    Recipe



    1. Cook pasta, adding broccoli and bell pepper 5 minutes before pasta is done.

    2. Meanwhile mix Sauce ingredients in a medium-size saucepan. Stir over medium heat until peanut butter melts and sauce is hot.

    3. Scoop 1 1/3 cups cooking water from pasta pot and reserve. Drain pasta and vegetables and return to pot along with peanut sauce and reserved cooking water. Toss to mix.
