    Penne with Caesar Sauce

    List of Ingredients




    1 lb penne rigate
    (short tubes with ridges)

    Sauce:
    1 tub (15 oz) part-skim ricotta cheese
    1 can (2 oz) flat anchovy fillets, drained
    2 Tbsp fresh lemon juice
    1 1/2 tsp bottled chopped garlic in oil
    1/3 cup grated Parmesan cheese
    2 bags (6 oz each) prewashed baby spinach
    3 Tbsp grated Parmesan cheese

    Recipe



    1. Cook pasta.

    2. Meanwhile purée Sauce ingredients in a food processor until smooth. With processor running, gradually add 1/3 cup pasta cooking water.

    3. Put spinach in colander in sink. Drain pasta over spinach. Transfer spinach and pasta to pot and add sauce. Toss to mix. Sprinkle with cheese.
