    2 Peppers - any colour (Green can taste bitter)0pts
    80g of dried pasta (preferable twists)4pts
    1 tblsp Green Pesto 1pt
    Salt
    Pepper
    1 garlic clove
    Fry Lite - free

    Recipe



    Turn the oven on high.

    Cut the peppers into chunks, chop the garlic as small as you can (or use lazy garlic as I do!). Get a baking tray, spray with fry lite, put the peppers in the tray, add the chopped garlic, some salt & pepper and a bit more fry lite then give it all a big shake.

    Pop this in the oven on high for about 15 - 20 mins, keep checking them, take them out when they are soft & slightly dark round the edges.

    While the peppers are roasting boil 80g of dried pasta (in water with a little salt), the twists are better because the pesto covers all the nooks & crannies!

    Once the pasta is cooked drain it off well, place in a bowl. Get 1 tablespoon of Pesto and mix thoroughly with the pasta until it is all covered.

    Then add your roasted peppers to the pasta and mix well - and hey presto! A great filling & tasty lunch or dinner (depending on how many points you have!)
