    1 box (16 ounces) macaroni or ziti noodles, cooked and drained
    1/2 cup butter
    6 tablespoons flour
    4 cups milk
    1-1 1/2 teaspoons salt
    1/2 teaspoon ground white pepper
    1/2 teaspoon ground nutmeg
    3 cups shredded mixed Italian cheeses, divided (provolone, mozzarella, asiago and Parmesan)
    1 cup ham, cubed
    1/2 cup mushrooms, sliced (optional)

    Preheat oven to 350ºF. Prepare macaroni as directed and set aside. Lightly spray Pan with vegetable pan spray. In heavy saucepan, melt butter. Whisk in flour. Gradually whisk in milk and continue to whisk until sauce is thickened. Stir in seasonings and 2 cups of cheese. Continue to stir until cheese is melted. Stir in ham and mushrooms. Combine sauce with cooked and drained macaroni. Pour into prepared Pan. Top with remaining cheese. Bake 35-40 minutes or until golden brown. Serve hot.

    YIELD: Serves 6-8.
