    8 ounces tricolored or plain radiatori

    1 cup chopped toasted walnuts

    4 ounces capicolla or fully cooked ham, cut into small cubes (3/4 cup)

    1 cup crumbled basil-and-tomato feta cheese or plain feta cheese (4 ounces)

    1/2 cup pitted ripe olives or unstuffed green olives

    1/4 cup oil">olive oil or salad oil

    1/4 cup lime juice

    1/4 cup snipped fresh parsley

    1 clove garlic, minced

    1/4 teaspoon salt

    1/8 teaspoon pepper

    Red-tipped leaf lettuce

    Recipe



    In a large saucepan or pasta pot bring 3 quarts water to boiling. Add pasta. Reduce heat slightly. Boil, uncovered, for 10-12 minutes, or till al dente, stirring occasionally. (Or, cook according to package directions.) Immediately drain. Rinse with cold water; drain again thoroughly.


    In a large bowl combine pasta, walnuts, capicolla or ham, feta cheese, and olives.


    In a screw-top jar combine oil, lime juice, parsley, garlic, salt, and pepper. Cover and shake well. Pour over pasta mixture and gently toss to coat all ingredients with dressing. Serve salad on lettuce leaves.
