    Tiger Prawn and Pasta Salad

    List of Ingredients




    2 courgettes, sliced on an angle into 1cm thick slices
    300g trottole pasta, cooked and refreshed
    300g pack vittoria tomatoes on the vine, halved
    250g pack cooked tiger prawns
    4 x 15ml spoons mild olive oil
    2 x 15ml spoons capers, finely chopped
    20g pack parsley, finely chopped
    20g pack basil, finely chopped
    zest and juice of 2 limes

    Recipe



    For the pasta base: In a griddle pan or frying pan cook the courgette slices for 1-2 minutes on each side, or until coloured. Allow to cool.

    Place the cooled courgette slices into a bowl along with the pasta, tomatoes and prawns.

    For the dressing: In a screw top jar, combine together all the ingredients, then pour over the salad base and mix to combine. Serve immediately either as an accompaniment, main course or picnic snack.
