    Warm Sicilian Spaghetti Salad

    INGREDIENTS
    2 cups baby spinach leaves
    2 cups torn radicchio
    1 15-ounce can white beans, rinsed and drained
    1/3 cup red onion, diced
    1/3 cup mint, snipped
    1/3 cup sun-dried tomatoes, slivered
    1/3 cup flat leaf parsley
    1/4 cup toasted pine nuts
    6 thin slices prosciutto, cut into thin strips
    1/3 cup olive oil
    1 tablespoon lemon juice
    1 tablespoon balsamic vinegar
    1 tablespoons dried currants
    1 tablespoon drained capers
    1/2 teaspoon grated lemon peel
    1 large clove garlic, pressed
    1/2 tsp coarsely ground black pepper
    1/2 tsp salt
    12 ounces thin spaghetti

    Garnish: shaved Parmesan cheese

    Recipe



    Place the spinach, radicchio, beans, onion, mint, sun-dried tomato, parsley, pine nuts, and prosciutto in a large mixing bowl.

    Place the olive oil, lemon juice, balsamic vinegar, currants, capers, lemon peel, garlic, pepper, and salt in a small saucepan. Gently heat though until hot and well blended. Keep warm.

    Cook the spaghetti until al dente and drain well. Add to the bowl with spinach mixture. Toss the salad with the warm dressing to coat. Garnish with shaved Parmesan, and serve immediately.
